Gracie: I'll eat 'em...but not for my eyesight. you see, carrots get their "good vision" reputation from the chemical that gives them their orange color....beta carotene. beta carotene is converted into vitamin A, which helps us see better in the dark. But the conversion process isn't very efficient, and once we've taken in a certain amount, the body stops converting it. gracie: For better eyesight, tia carmen, we should simply eat vegetables high in vitamin A itself, including leafy greens like kale and spinach! tia: Gracie, eat your carrots! they make you smart!
